Tomatoes contain the antioxidant Lycopene.

Health benefits: Tomatoes strengthen the immune system, slow the progress of degenerative diseases and reduce the risk of certain cancers, especially prostate, lung and stomach cancers.

The best way to eat them: Tomatoes are best when they're hot! Cooked tomatoes contain more lycopene than raw tomatoes, canned tomatoes have three times more lycopene than fresh tomatoes, and tomato sauces, such as those in pasta and Pizza, will give you five times more lycopene than raw tomatoes.

Can Pizza Diet Prevent Cancer?
By New York Times News Service

Eating pizza regularly may help prevent cancer, a team of researchers from (where else?) Italy suggest.

The findings appear in the International Journal of Cancer, published on Monday. In it, the authors acknowledge that pizza is among the foods most closely associated with their country, and they cite evidence that their countrymen who eat pizza regularly, once a week or more, are less likely to develop cancers of the digestive tract.

When the researchers compared one group of people who had had cancer of the esophagus with one that had not, for example, they found that almost 58 percent of the first group were not pizza eaters, while about 37 percent of the second group were.

Almost 600 people treated for cancer over nine years were asked about their diets. The results were compared with answers from almost 5,000 people who had not had cancer.

The benefit, if any, presumably is associated with two of the more prevalent ingredients in pizza, tomato sauce and olive oil.  In collaborative studies, finding have shown that tomato sauce and olive oil reduce the overall risk of cancer because of the Lycopene in tomatoes and the non-saturated fats in Olive Oil..

In fact, the study noted that the traditional Mediterranean diet overall has been shown to be associated with a reduction in several types of disease
